Gambian Chef Modou Jaiteh. Chef Modou opened the West African restaurant Jacaranda in Boulder in 2019, after working at Arcana. Currently living and cooking in Savannah, GA, Modou is looking forward to cooking on the front range again, especially for those people who supported Jacaranda in the Boulder community.
